Lovage

Not widely known, and certainly not widely seen in markets, lovage is the best-kept secret of the herb world. Its flavor--like celery but sweeter, richer, deeper--is hard to describe but impossible to forget. It is used fresh or dried: just a few leaves, finely chopped, is all it takes to lend a rich, delightful essence to any dish. Of course, like all herbs, lovage has its share of medicinal applications: it is said to stimulate digestion and have mild antiseptic properties. It's also a beautiful perennial plant in a lovely pale green shade with a graceful arching habit. But the real deal is the amazing flavor. Add it to stocks.
