Grow Rosa Bianca for its beauty: its softball-sized, rounded, only slightly elongated fruit are spectacular. Or, grow it for its taste: it is among the most delicately flavored of eggplants, custard-like and not at all bitter when fully roasted. Whatever your reason, you will not be disappointed.
Growing instructions
Sow indoors 6-8 weeks before last frost, then transplant 24" apart once danger of frost has passed and soil is warm--usually 2-3 weeks after last frost. Cover immediately with row cover, as flea beetles love to devour eggplant leaves. Eggplants want heat; choose your sunniest spot for them. Give them ample water, drip irrigation is best. Harvest when fruit have reached 4-6" in diameter and prepare like any Italian eggplant.
