French Grey Shallots, also known as Griselles, are thought of as the true shallots, as they can only be propagated from bulbs. Highly prized by chefs, foodies, and home cooks alike, they have a delicious, more refined, umami flavor, as well as very pretty, delicate, pink-purple flesh.
Grey shallots do not store as well as Dutch Red Shallots (only about 3-4 months), but they make up for it with their exquisite flavor. Plan to use them up by the winter solstice—or freeze or pickle for use into the following spring.
A pound of this variety will give you 40-50 plantable cloves of shallots, enough to plant a 25-foot row or 10 feet of a 3-foot-wide garden bed. They will typically yield 6 to 10 times what was originally planted; like all alliums, shallots yield best with very nutritious, well-draining soil and abundant moisture.
