Murasaki is a truly stunning Japanese sweet potato, offering a beautiful contrast in the garden and on the plate. It features a striking, deep purple skin that, when cut, reveals a surprisingly pure white flesh. The flavor is its true calling card: complex, sweet, and distinctly nutty, often compared to a water chestnut. This isn't your typical sweet potato; its texture is drier and fluffier, making it a fantastic choice for baking and roasting, as it holds its shape beautifully and won't become watery.

In the garden, Murasaki produces a good, reliable yield of uniformly shaped roots. It also boasts good resistance to Fusarium and root-knot nematodes, making it a resilient choice. While it takes a bit longer to mature (around 100 days), the reward is a high-nutrition crop that stores exceptionally well. That drier flesh isn't just for texture; it's what allows these tubers to last much longer in storage than their orange-fleshed cousins, keeping your pantry stocked with this delicious, nutty treat.

NOTE: Your sweet potatoes will arrive as bare-root "slips"—live sprouts ready to plant. Don't be alarmed if they appear wilted, dry, or pale from their travels; this is perfectly normal, and these slips are famously hardy. If you can't plant them immediately, you can store them for a few days by wrapping the root ends in a moist paper towel (keeping the leaves dry) and standing them upright in a glass at room temperature. If planting must be delayed a week or more, it's best to loosely plant the slips in a pot of moist soil and keep them indoors until you're ready.

Growing instructions
In late spring, after all frost danger has passed and soils have warmed to at least 65°F , plant sweet potato slips in a full-sun location. Slips may arrive wilted but are viable and should be planted immediately. Space plants 10-18 inches apart in rows 3-4 feet apart , preferably on raised ridges. Keep moist for the first few weeks and weed diligently until the vines establish. Harvest before or just after the first frost and cure roots at 80-85°F with high humidity to ensure long-term storage.
